THE white bean used throughout Spain to make fabada asturiana and many other dishes is the alubia blanca, the white kidney bean, which is readily available here. While Paul Viggers (Letters, 24 October) is correct to point out that the haricot bean is too small, the white butter bean which he suggests is far too big and has a different texture.
