Sir: Since it is the dorsal root ganglia which are now suspect, there is no need to separate the bone from the meat. Those ganglia and the spinal cord are encased in a tough membrane within the spinal canal - the dura. Abattoir workers are now legally required to remove the spinal cord; the only additional move they need to make is to take the dura with it and the dorsal root ganglia will be included.
