THE PLATE
The last word in mountain restaurants, Trapper's is the perfect way to finish a day on the ski slopes. You're greeted with a glass of champagne, hors d'oeuvres and fleece slippers in front of a huge open fire. Then, when you're suitably relaxed, start with satay chicken and shrimp vegetable spring rolls, crispy coconut Thai shrimp, Moroccan scallop skewers, black bean tortilla soup or chicken vegetable soup. Main courses include grilled Atlantic salmon with corn and chayote south western hash, honey and coriander-scented duck breast, pine nut-encrusted breast of pheasant, and pan-seared beef tenderloin.
For desserts there's a choice of sorbets and berries, strawberry rhubarb pie and spiced pumpkin mousse in chocolate-dipped hazelnut tart and upside-down baked apple pie and bourbon.
THE VIEW
Trapper's Cabin is billed as Beaver Creek's most unique dining experience. To get to this unquestionably posh pad you have to take the Bachelor Gulch Express chair lift or a snowcat to the top of the mountain where you'll dine 9,500ft above sea level. The cream coloured log cabin is a four-bedroom retreat, set high on a snowy mountain ridge blanketed by aspens and deep snow, with spectacular views that look east over the Avon/ Vail valley.
THE BILL
To eat at Trapper's you must stay at least four nights, but all meals, drinks, lift tickets and lunch are included. Expect to pay around £500 per night for a four-night stay, dropping to £270 per night during the summer.
