The Charlton manager, Alan Curbishley, who failed in his first bid for Fish in June, said: "I am absolutely delighted to have signed Mark. We have been tracking him for some time and he will add competition for places in our defence."
Fish said: "There is a huge interest in the Premiership back in South Africa and that is where I need to be playing."
The Manchester United striker Teddy Sheringham has won the Carling player of the month award for October, while Arsenal's Arsÿne Wenger has been named Carling manager of the month.
The defender Hayden Foxe will miss Australia's friendly with Scotland in Glasgow on Wednesday after breaking his foot during a trial with West Ham. He is expected to be out of action for four to six weeks.
"I'm bitterly disappointed, I was obviously looking forward to playing for Australia next week and I did not need this on top of my problems with my work permit," Foxe said. "But that's life and I've got to get on with it."
