The 34-year-old driver was the sole occupant of the Alpha Romeo car when it hit the animal on the main N7 Dublin to Limerick Road near Moneygall, Co Offaly.
The man, believed to be from Ballinasloe, Co Galway, was travelling on a section of the road at Clashagad, Dunkerrin just after midnight at the time of the accident.
He was taken to Nenagh General Hospital where he was pronounced dead shortly after 2am.
A section of the main N7 road was shut down after the crash with traffic diverted between Roscrea and Dunkerrin village.
Investigating officers at Moneygall Garda Station have appealed for witnesses.
