200g/7oz good-quality beef, sliced

100g/3 1/2oz French beans, halved

One large red chilli, chopped

2 cloves of garlic, chopped

1 stalk lemon grass, sliced

5g/ 1/4oz sweet basil

1 tablespoon soy sauce

1 1/2 tablespoon oyster sauce

1 teaspoon sugar

3 tablespoons oil, for frying

Heat the oil in a wok and fry the beef until almost cooked through. Add the garlic and French beans and stir-fry for two minutes. Add the rest of the ingredients, except the sweet basil. Cook for one minute. Just before serving add the basil and toss lightly.
