Here are three simple alternatives to the usual stuffing, all from Caroline Waldegrave.
Quantities given suitable for a 4-5kg/8-10lb turkey
200g/7oz dried apricots
100g/4oz walnuts or pistachios
30g/1oz breadcrumbs
1 egg
Chop the apricots and nuts. Mix with the breadcrumbs and egg. Season well.
