Watermelons provide loads of options for cocktail creativity; they are delicious and refreshing and the flesh can be easily juiced. For this recipe, take a watermelon and cut a lid from one of the poles, rather in the mode of a pumpkin. Hollow out the insides and push the flesh through a sieve. Take some of the resultant juice and mix with an equivalent quantity of caster sugar. The rest of the juice can be blended with fresh pineapple chunks and ice and served as a large non-alcoholic slushy in the hollowed watermelon.

150ml Arette Blanco tequila or any 100% agave tequila
20ml fresh lemon juice
25ml watermelon syrup

Shake all ingredients hard over ice, and strain into a chilled martini glass. Garnish with a watermelon wedge.
