It’s the last bank holiday of the year and the 50th Notting Hill Carnival weekend – time to crack open the rum.

Keep it simple if you’re planning a barbie (fingers crossed for sunshine!), going for something long, cool and refreshing like a Cuba Libre or Mojito during the day. For cocktails in the evening, you might want to take it up a notch, going for a darker, more intense rum bursting with an array of agreeably complex flavours – the delicious 1919 Treacle rounds up the long weekend perfectly.

Simple mojito recipe

Ingredients:

50ml Havana Club 3 Year-Old Rum

8 mint leaves

10ml fresh lime juice

25ml sugar syrup

12.5ml chilled club soda

Sprig of mint to garnish

Method:

Muddle the mint leaves (by pressing downwards with a twisting motion to release juices and oils) in a cocktail shaker. Add the ice and rum, lime juice and sugar syrup and shake well. Strain into an Collins glass filled with crushed ice and stir in the soda water. Garnish with the fresh mint sprig.

Cuba Libre

Ingredients:

50ml Bacardi Gold Rum

Cola

Lime

Method:

Fill a Collins glass with ice, add rum, half a shot of freshly-squeezed lime juice and top with cola. It's as simple as that.

1919 Treacle

Ingredients:

50ml Angostura 1919 Rum

3 dashes Angostura aromatic bitters

12.5ml maple or sugar syrup

37.5ml pressed apple juice

Method:

Add all ingredients to a mixing glass. Add ice then stir for 15-20 seconds. Strain into a rocks glass filled with ice. Garnish with an apple fan.
