How to make chilli bean burgers

Whether you’re a vegetarian or just looking to spice things up, this recipe puts a twist on the typical burger

Chilli bean burgers

Total time: 30 minutes
Serves: 4

2 tbsp oil
1 carrot, grated
½ bunch salad onions, thinly sliced
½ tsp chilli powder
400g can mixed bean salad, drained and rinsed
75g fresh breadcrumbs
1 medium essential Waitrose Egg, beaten
4 Waitrose Duchy Organic Wholemeal Pittas, toasted
Tzatziki and salad, to serve

Heat 1 tbsp oil in a frying pan and fry the carrot, salad onions and chilli powder for 2-3 minutes.

Meanwhile, roughly crush the bean salad with a potato masher. Stir in the carrot mix, breadcrumbs and egg then season well. Shape into 4 burgers and chill for 15 minutes.

Heat the remaining oil in a frying pan and fry the burgers for 3 minutes each side until golden. Slit open the pittas and place a burger inside each. Add a spoonful of tzatziki and serve with rocket leaves or a green salad.
