I especially love it because it's from a book I bought for 5p - Good Food Fast by Malcom Hillier (you can also find the recipe in Hiller's Fast and Simple Cookbook, Dorling Kindersley, £12.99). It's simple, so you can talk while you're cooking it, but impressive - it's my banker. The secret's in the cardamom - kids love to crush the pods.
2tbsp olive oil
2 cloves garlic, chopped
1tbsp ground coriander
1tbsp ground cumin
10 cardamom pods, crushed
1tsp ground ginger
4 boned chicken breasts, skinned
90g sultanas
400g can of chopped tomatoes
60g pitted black olives, halved
Juice of 1 lemon
2tsp tahini
60g sliced toasted almonds
coriander sprigs to garnish
Heat some oil in a large frying pan, then add the cumin, garlic, ginger, cardamom and coriander, and fry. Next, add the chicken and the sultanas and brown the meat, making sure the spices stick to it.
Next, add in everything else except the almonds and the garnish, give it a stir and leave it to cook for about 10 minutes. Put in the almonds, sprinkle the coriander on top and serve with cous cous.
