Head chef Ryan Matheson shares his recipe on making the perfect scrambled egg incorporating truffle.

How to make Truffle scrambled eggs

Ingredients

  • 3 Heritage eggs
  • Knob of butter
  • Black truffle
  • Salt and pepper 
  • Chunky slice of sourdough

Method

1. Heat heavy bottomed pan
2. Whisk the eggs in a bowl
3. Add the butter to the pan and allow to melt and sizzle
4. Pour egg mixture into pan once butter has melted
5. Reduce the heat to low flame
6. Use spatula to toss and fold the eggs until light, fluffy consistency
7. Serve immediately on freshly cut sourdough toast
8. Sprinkle shavings of black Umbrian truffle on top
9. Season with salt and pepper and serve.
