A restaurant founded in Amsterdam which serves a menu of avocado-based dishes is expanding its model to the UK as part of a major European expansion.

Founded by Ron Simpson and Julien Zaal in 2017, The Avocado Show launched in a nod to the growing craze for the fruit.

Nachos, poke boles, salads and a burger with an avocado as the bun are some of its most popular items on the menu.

It has signed 19 locations in Europe according to a statement, and is looking to recruit partners for “key cities and quality towns”.

Branches in London, Madrid, and Paris are expected to be the first new location for the restaurant, while Edinburgh, Leeds, Manchester, Birmingham, Bristol, Cambridge, Oxford, and Guildford have been suggested as likely to follow suit.

The restaurant currently has three locations in Amsterdam and one in Brussels.

The founders have also launched a cookbook titled “The Avocado Show: Recipes for the world's most Instagrammable fruit” and other merchandise, and have been featured in a documentary about sustainability.

According to the restaurant’s website the team “work hard to ensure every single avocado we use in our restaurants is sustainably grown and picked, then packed and transported via socially responsible means”.

Simpson said in a statement: “We are very excited to work with such great partners and see our dream becoming a reality in these amazing new markets, and are looking forward to establishing The Avocado Show globally as a socially responsible and profitable venture that will bring joy to avo lovers for years to come.”

An opening date for the new sites is yet to be confirmed.
