From Chile's southern Bio-Bio Valley, one of the remotest wine regions on earth, this is an opulently ripe chardonnay whose fermentation in oak casks adds a toffee-apple-like note to the underlying honey and tropical citrus elements. Try drinking this with a chargrilled or cold salmon.

The family firm of Martinez Bujanda make some of the most consistently interesting reds coming out of Rioja. This classic 1997 crianza, aged in oak casks for a year, is attractively perfumed and imbued with soft, strawberryish fruitiness. Delicious with chorizo.
