The episode, titled "Last Orders," showed Peggy's final moments in Albert Square, as she was joined by her sons Grant (Ross Kemp), who was last seen 10 years ago, and Phil (Steve McFadden).
Pat Butcher (Pam St Clement) even appeared as a ghost to bid goodbye to the Mitchell family matriarch - complete with her famous earrings.
Dame Windsor, 78, who joined the soap in 1994, said Peggy was "something I need to shut the door on".
When her departure was announced in January, Dame Barbara told the BBC Peggy was "a character close to my heart but I made the decision a while ago that I need to say goodbye to her once and for all".
"Otherwise, she will always be there, urging me to go back, and that is something I need to shut the door on."
