Y is for Yoghurt Burnt Cream in our alphabet of sweet treats which has made no concessions to

healthy eating, though this is a little less calorific than a full creme brulee. It's from Nigel Slater's Real Fast Puddings (Michael Joseph pounds 9.99).

YOGHURT BURNT

CREAM

Serves 4 to 6

1 large carton thick Greek-style

strained yoghurt

450g/1lb stoned, chopped nectarines, peaches

or seasonal fruit

Approx 110g/4oz caster sugar

You will need those sweet little white china ramekins or a shallow dish similar to a quiche plate. Two-thirds fill the dishes with the fruit then cover with the yoghurt and smooth flat with the blade of a knife. Sprinkle with caster sugar, making sure you completely cover the yoghurt to the thickness of a pound coin.

Place on the grill pan and cook under a preheated hot grill till the sugar starts to caramelise. Probably a couple of minutes. You may have to turn the dishes round to achieve an even effect.

You need not stick to nectarines or peaches. Other fruits, such as strawberries or raspberries, also work well.
