The 30-year-old made his Test debut against Fiji in June 2010, but was then ruled out of World Cup contention last autumn by a foot injury.
His arrival at Kingsholm next season will see him fill the void left by Scotland international Scott Lawson, whose departure was confirmed yesterday.
Edmonds also has considerable Super Rugby experience, having played for the Waratahs, Stormers and Brumbies.
Gloucester head coach Bryan Redpath said: "Huia is an experienced player who has performed consistently well at Super Rugby and international level.
"He's an athletic, mobile, ball-playing hooker who has also worked incredibly hard on his set piece-work."
