LETTER : Know your soy

Sir: Annie Bell is wrong to say the Japanese do not produce a light soy sauce (Magazine: "The sauce of the Japanese", 10 February). While the dark koikuchi soy sauce is traditionally used in the eastern and northern regions, the light usukuchi is an essential part of cuisine in the south and west and is available in London.
